My 7-year-old son, Leo, is a selective eater and would subsist only on “ham on baguette” if we let him. I am kind of crazy about protein so I am constantly trying to find ways to get more of it in his body. For the last six months I have made smoothie after smoothie that has been rejected by him… until… I let go of my fix with protein and decided to focus on some other nutrients that he hasn’t been getting in his diet. And this is how this Kid Friendly Smoothie came to life. There are a lot of ingredients in this smoothie but if you have them all on hand it is super easy. The frozen bananas are a key ingredient so be sure to freeze them ahead of time. My recommendation is to start with the lower range of the ingredients and then increase to the higher range after approval.
Kid Friendly Smoothie- Leo Approved!
Serves 6
- 6-8 organic pitted dates
- 6-8 organic brazil nuts (soak the night before to soften if you can)
- 1-2 tbsp Artisana raw organic coconut butter
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 heaping scoop of Amazing Grass Kidz Superfood chocolate flavor
- 1-2 tbsp ground flax seeds
- 2 frozen organic bananas
- 4 cups organic frozen fruit (Leo likes a mix of peach, mango and strawberry)
- 3 cups organic almond milk or milk of choice
Add ingredients in the order listed to your blender or Vitamix and blend until smooth. If you have a Vitamix, slowly go from 1 to 10 until it is completely blended. The smoothie should be served thick and cold. Enjoy!
